Makes 12\u201315 arancini.<\/em><\/p>\n\n\n\n
For the Risotto (or use 3 cups leftover):<\/h3>\n\n\n\n

2 cups cooked risotto (chilled overnight works best)<\/li>\n\n\n\n
\u00bd cup grated Parmesan cheese<\/li>\n\n\n\n
1 egg yolk<\/li>\n<\/ul>\n\n\n\n

4 oz (115g) mozzarella, cut into \u00bd-inch cubes<\/li>\n\n\n\n
\u00bd cup cooked peas (optional)<\/li>\n\n\n\n
\u00bd cup cooked ground beef or ragu (optional)<\/li>\n<\/ul>\n\n\n\n
For Breading & Frying:<\/h3>\n\n\n\n

1 cup all-purpose flour<\/li>\n\n\n\n
3 eggs, beaten<\/li>\n\n\n\n
2 cups panko or breadcrumbs<\/li>\n\n\n\n
Oil for frying (vegetable or canola)<\/li>\n<\/ul>\n\n\n\n
Step-by-Step Instructions<\/h2>\n\n\n\n
Step 1: Prep Risotto Base<\/h3>\n\n\n\n\n
If using fresh risotto, cool completely. Mix in Parmesan and egg yolk. Risotto should be thick and sticky.<\/li>\n<\/ol>\n\n\n\n
Step 2: Form Balls<\/h3>\n\n\n\n\n
Wet your hands. Scoop about \u00bc cup of risotto. Flatten into a disc in your palm.<\/li>\n\n\n\n

Set up three bowls: flour, beaten eggs, breadcrumbs.<\/li>\n\n\n\n
Roll each ball in flour \u2192 dip in egg \u2192 coat in breadcrumbs. Press firmly so crumbs stick.<\/li>\n<\/ol>\n\n\n\n

Heat 2 inches of oil to 350\u00b0F (175\u00b0C).<\/li>\n\n\n\n
Fry arancini in batches, 3\u20134 minutes, turning occasionally, until deep golden brown.<\/li>\n\n\n\n
