Stuffed bell peppers are a complete meal in a colorful package. Ground beef. Rice. Tomato sauce. Baked until the peppers are tender and the filling is bubbling.<\/p>\n\n\n\n
Fifty minutes. One dish. Dinner solved.<\/p>\n\n\n\n
Ingredients<\/h2>\n\n\n\n<\/figure>\n\n\n\n
Serves 4 (4 peppers).<\/em><\/p>\n\n\n\n
\n
4 large bell peppers (any color), tops cut off and seeded<\/li>\n\n\n\n
1 lb ground beef (80\/20)<\/li>\n\n\n\n
1 cup cooked rice (white or brown)<\/li>\n\n\n\n
1 cup tomato sauce or diced tomatoes<\/li>\n\n\n\n
1 small onion, diced<\/li>\n\n\n\n
2 cloves garlic, minced<\/li>\n\n\n\n
1 cup shredded cheddar or mozzarella cheese<\/li>\n\n\n\n
1 tsp Italian seasoning<\/li>\n\n\n\n
\u00bd tsp salt and pepper<\/li>\n\n\n\n
1 tbsp oil<\/li>\n\n\n\n
Fresh parsley for garnish<\/li>\n<\/ul>\n\n\n\n
Step-by-Step Instructions<\/h2>\n\n\n\n
Step 1: Preheat & Prep<\/h3>\n\n\n\n\n
Preheat oven to 375\u00b0F (190\u00b0C).<\/li>\n\n\n\n
Cut tops off peppers. Remove seeds and membranes.<\/li>\n\n\n\n
Place peppers upright in a baking dish.<\/li>\n<\/ol>\n\n\n\n
Step 2: Cook the Filling<\/h3>\n\n\n\n\n
Heat oil in a skillet over medium-high heat. Cook onion and garlic 2 minutes.<\/li>\n\n\n\n
Add ground beef. Cook 5-6 minutes until browned. Drain grease.<\/li>\n\n\n\n
Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer 2 minutes.<\/li>\n<\/ol>\n\n\n\n
Step 3: Stuff the Peppers<\/h3>\n\n\n\n\n
Spoon filling into each pepper, pressing down gently.<\/li>\n\n\n\n
Top each with shredded cheese.<\/li>\n<\/ol>\n\n\n\n
Step 4: Bake<\/h3>\n\n\n\n\n
Add \u00bc cup water to the bottom of the baking dish (steams the peppers).<\/li>\n\n\n\n
Cover with foil. Bake for 30 minutes.<\/li>\n\n\n\n
Remove foil. Bake 5-10 more minutes until cheese is melted and peppers are tender.<\/li>\n<\/ol>\n\n\n\n
Step 5: Serve<\/h3>\n\n\n\n\n
Garnish with parsley. Serve hot.<\/li>\n<\/ol>\n\n\n\n
